Other people have tried pop up food carts in Hanoi in the past, but the one put together by foodie Javier Rodriguez could be a winner.
“I want to make innovative and creative food and put it on a cart,” he explains. “I like to take classic foods and put my spin on them. I mostly do TexMex because that’s what I grew up cooking and eating, but the concept is more like TexMex meets the world. I hand-make pretty much everything. I really love this food and I want people to feel that when they eat it.”
